(Yet another version of) FRIED RICE
Ingredients:
4 cups cold cooked rice with mixed getables
1/2 cup chicken breast (cut in cubes)
1/2 cup fork (cut in cubes)
1/2 cup small shrimp
1/2 cup beef
3 eggs (cooked omelette style and cut in long strips. Use kitchen shears or scissors to
cut long strips easily)
1 tsp. minced garlic
1/4 cup onions (cut in cubes)
1/4 cup tomatoes (cut in cubes)
Green Onions (cut the tops in 1/2 inch)
Soy sauce
2 tsp. vegetable oil
Slat and Pepper
Directions:
- Heat vegetable oil in a large frying pan or saucepan. Add the minced garlic until golden
brown then add the onions. Stir fry, then add the tomatoes, keep stir frying until
tomatoes are slightly cooked.
- Add the chicken, pork and beef
- Pure soy sauce over the mixture
- Keep stir frying to prevent the rice from burning or sticking to the pan.
- When the liquid is about gone, check if the meat is done before adding the shrimp
- Add shrimp and stir fry for 3 minutes then take the pan off the burner to prevent
burning as you do the next step
- Mix soy sauce and cold cooked rice in a bowl.
- Add 1 tsp of cooking oil to the rice/soy sauce mix
- Now return the pan to the burner and add the rice and soy sauce mix into the pan
- Add the meat and eggs. Mix well.
- Season with salt and pepper.
- Sprinkle with green onion tops and remove from the burner. Serve hot.
Note: For the uninitiated, cooking the rice the night before will change
the texture of the rice and will give it more body for frying. This is why the recipe
calls for cold cooked rice.
Another note: Your arm might get tired from stir frying but the dish is
so good it is well worth the effort.
