Bisdak Banana Hearts Salad
Ingredients:
2 pieces banana hearts
1 cup coconut cream (or
coconut milk if cream is unavailable)
2 cloves garlic, minced
1/4 cup sliced onions
1/4 cup sliced tomatoes
2 tablespoon rock salt
(other salt can be substituted
but rock salt seems to taste
better with this recipe)
1 tablespoon oil
2 tablespoon vinegar
salt and pepper to taste
Directions
Slice banana hearts crosswise in thin
strips. Add salt, let stand for a few minutes. Squeeze off the bitter juice. Run tap water
to rinse and pat dry.
Heat oil in skillet, sauté garlic,
onion and tomatoes. Add the sliced banana hearts and vinegar. Bring to boil without
stirring. Season to taste then add the coconut cream or milk. Heat through for a few more
minutes. Serve warm or cold.
